Do you want to preserve your fresh summer harvest and enjoy it as jam or compote in winter? Germs and bacteria are the biggest enemies that can cause preserved food to spoil. Don't worry! You can easily use your Thermomix to disinfect the jars.

  • Place a clean tea towel on the work surface. Store the sealing rings of the jars in a bowl of water until use.
  • Pour water into the mixing bowl, place the Varoma container on top and place the jars and any glass lids with the opening facing downwards. Close the Varoma container.
  • Start food processor: 20 minutes / Varoma / level 1 steam
  • Without drying them, place the jars directly on the prepared tea towel with the opening facing downwards and allow them to dry.
  • Then quickly proceed with the preparation of the desired recipe.

What methods are there to sterilize jars?

The jars should still be warm when filling. Depending on the recipe, it may be a good idea to switch to a different method for disinfection. The most common method is boiling: the jars are completely immersed in boiling water for around 10 minutes. Alternatively, you can heat the jars in the oven at 140°C for 15-20 minutes. Each of these methods ensures that the jars are germ-free and you can preserve your favorite jam without worry!

Is there a difference between boiling and preserving?

Yes, there is actually a difference! Preserving is a general term for preserving food by heating and sealing it in glass jars, for example in washed pickle jars. Preserving, on the other hand, refers specifically to the process developed by Johann Weck and his company. Today, "preserving" is often used synonymously with canning, but originally it described a special method using special Weck jars and rubber rings.
