Thermomix recipe: bunny cookies for Easter

Well, how about you, are you already in the mood for spring? We are totally ready in any case. Ready for good weather, ready for sun. And of course: ready for Easter! And since there are no reasons why cookies should mainly be served at Christmas, we have come up with a delicious little recipe for bunny cookies that are suitable for Easter.

We enjoyed the cookies on their own, but if you want you can of course decorate them with sugar icing. To do this, simply mix 125g sugar with 2 tablespoons of water until smooth and pour it onto the cookies. You can also use lemon juice instead of water. Or if there are no children eating with you, you can use limoncello or eggnog.

Ingredients:

  • 125g soft butter
  • 50g cane sugar
  • 1 tsp vanilla paste
  • a pinch of salt
  • 1 egg, size M
  • 175g spelled flour, type 630
  • 50g ground hazelnuts

Preparation:

1. First add all the dough ingredients into the mixing bowl at once and mix for 15 seconds at speed 5. Remove the dough and wrap it in cling film and chill for at least 2 hours.

2. Roll out the now firmer dough and cut out the cookies (we used our bunny shape for this). Now the cookies can be placed in the oven preheated to 180°C top/bottom heat and baked for 10 minutes. As long as the cookies are still a little soft when they come out of the oven, that's fine. As they cool, they become harder again. :)
