Do you want to preserve your fresh summer harvest and still enjoy it in winter as jam or compote? Germs and bacteria are the biggest enemies that can spoil your preserves. Don't worry! To disinfect the jars, you can simply use your Thermomix to disinfect the jars. 

 

What you need 

  • 500 g water 
  • MaxiSteam Varoma enlargement 

 

And this is how it works

  • Place a clean tea towel on the work surface. Store the sealing rings of the preserving jars in a bowl of water until you are ready to use them.
  • Pour the water into the mixing bowl, place the Varoma container on top and place the jars and any glass lids inside with the opening facing downwards. Close the Varoma container.
  • Start the food processor: Steam for 20 minutes / Varoma / level 1
  • Without drying, place the preserving jars directly on the prepared tea towel with the opening facing downwards and leave to dry.
  • Then quickly continue with the preparation of the desired recipe.

What methods are there for sterilizing preserving jars? 

 

The jars should still be warm when you fill them. Depending on the recipe, it may make sense to use a different method for sterilizing. The most common method is boiling: Here, the jars are completely immersed in boiling water for around 10 minutes. Alternatively, you can heat the jars in the oven at 140°C for 15-20 minutes. Either of these methods ensures that the preserving jars are germ-free and you can preserve your favorite jam without any worries! 

Is there a difference between preserving and canning? 

Yes, there really is a difference! Preserving is a general term for preserving food by heating and sealing it in glass jars, for example in washed-out pickle jars. Preserving, on the other hand, refers specifically to the process developed by Johann Weck and his company. Today, "preserving" is often used synonymously with canning, but originally it described a special method using special Weck jars and rubber rings.
