A glass of sparkling water, a few ice cubes, lemon slices and a tablespoon of homemade syrup and the raspberry and thyme spritz is ready for hot summer days.
The syrup is also perfect as a topping for ice cream, cake or Greek yoghurt and, with its subtle hint of thyme, makes for a taste experience of a special kind.
The raspberry juice required is mixed with MixFino from fresh or frozen fruit and processed into a delicious syrup.
Ingredients:
1 kg raspberries (fresh or frozen)
3-4 stalks of thyme
100 g sugar
50 g gelling sugar
20 g vanilla sugar
Sparkling mineral water
ice cubes
Thyme and raspberries to garnish

Preparation in Thermomix:
- Fill mixing bowl with 2000 g water.

Juice for 30 minutes / Varoma / gentle stirring setting. - Empty and wash out the mixing bowl.
- Pour the juice into the mixing bowl with the remaining ingredients and cook for 20 minutes / 100°C / speed 1 bring to the boil.
- Pour the syrup into a clean bottle rinsed with hot water and leave to cool.
