Strawberry sauce
This sauce is great for spaghetti ice cream! Red, sweet and delicious - strawberries are one of the most popular types of fruit.
We can enjoy them as a dessert, as jam, in a delicious strawberry punch or as strawberry liqueur, for example.
But they also taste really delicious in salads, on cakes, in smoothies etc.!

INGREDIENTS
- 300 g strawberries
- 3 tbsp lemon or lime juice
- 1 vanilla pod
- 150 g gelling sugar 2:1
- 1 pinch of salt
- chopped almonds/pistachio kernels for decoration
INSTRUCTIONS
First wash the strawberries, pat dry with a kitchen towel, remove the leaves and cut in half.
Then place the strawberries in a bowl, mix with lemon juice, preserving sugar, salt and the scraped vanilla pulp and leave to marinate in the fridge for 5 hours.
Put the strawberries into the blender jug and puree for 10 minutes/speed setting 6, then fill into clean jars.
Store in the fridge, the strawberry sauce will keep for at least 2 weeks if removed with a clean spoon.
The sauce can be made with any fruit.
RECIPE NOTES
To serve:
Press the vanilla ice cream through the spaetzle press onto a plate, place the strawberry sauce in the middle and decorate with almonds/pistachios.
