Oven baked pumpkin vegetables with meatballs

Our pumpkin vegetables with meatballs is the perfect collaboration between #Thermomix® and oven and is easy to make, so this dish certainly won't cause any extra stress.

INGREDIENTS
- 1 piece of Hokkaido pumpkin
- 1 leek
- 750 g potatoes, mainly waxy
- 4-5 stalks thyme or 2 tsp heaped
- 1-2 sprigs of rosemary
- 4-5 tbsp oil
- 1 tsp coarse salt
- pepper
- 1/2 tsp sweet paprika powder
- 1 small onion
- 500 g minced meat mixed
- 800 ml water
- 100 g whipping cream
- Parsley
INSTRUCTIONS
Quarter the pumpkin, scoop out the seeds with a spoon and cut into thin slices. Cut the leek into rings, peel the potatoes and cut in half lengthwise. Place everything in a large bowl.
Pluck the rosemary and thyme, place in the mixing bowl, add the oil, salt, pepper and paprika powder and chop for 4 seconds/speed setting 5, then mix. Then add the marinade to the vegetables, mix well and transfer everything to a baking dish.
Rinse out the mixing bowl. Peel the onion, place in the mixing bowl and chop for 3 seconds/speed setting 5. Now add the minced meat to the mixing bowl, season with a little salt and mix well on the left-hand setting with visual contact.
Shape the mince into small balls, place in the Varoma® and cook for 20 min/speed setting 1. Spread the meatballs over the vegetables.
Now place the casserole dish on the lowest shelf of the preheated oven and cook at 200°C for approx. 45 minutes.
Remove the casserole dish from the oven, pour the cream over the vegetables and mix carefully. Roughly chop the parsley to garnish the dish.
