My alternative? Guar gum! That sounds wacky. Ever heard of it?
Guar gum is the ground endosperm of the guar bean, a one-year-old legume.
The predominant use of guar gum is as an emulsifier and thickener in various foods. It is neutral in odour and taste and can therefore be used as an ideal binder to thicken liquids. It can therefore be used for baking, jams and jellies, soups, salad dressings, sauces, syrups, juices or dairy products.
For me in particular: In smoothies! It improves the texture and is gluten- and lactose-free. Oh yes: Excellent also for the vegans among you!
Here's my favorite recipe for the perfect banana guar gum smoothie:
- 150ml Water
- 100 pieces of frozen bananas
- 3 g guar gum
- 30 g protein powder
