Tender beef fillet with fiery ginger-chilli sauce

That's exactly why this recipe is regularly on our menu.
With just a few ingredients you can conjure up a delicious dish in almost no time at all, with which you can demonstrate your Asian cooking skills to friends and family.

Ingredients for 4 servings :

  • 500 grams of water
  • 1 stick of leek
  • 250 grams of carrots
  • 20 grams of sunflower oil
  • 3-4 chili peppers / 1-2 teaspoons chili flakes, dried
  • 10 grams fresh ginger, peeled
  • 3 cloves of garlic
  • 500 grams of beef fillet, cut into thin slices
  • 50 grams of soy sauce
  • 300 grams of dark beer (e.g. from König Ludwig)
  • 2 teaspoons salt
  • 2 teaspoons brown sugar
  • Optional: Fresh corinander
  • 300 grams rice (cooked separately)

Preparation :

1. First add the water to the mixing bowl, place the Varoma on the mixing bowl and weigh the carrots and leeks in fine pieces.
The vegetables should now be cooked for 22 minutes/Varoma/level 1 . The best cooking results in Varoma are always achieved when using a cooking chimney, which ensures even circulation.

2. Now put the Varoma aside and wash the mixing bowl with cold water. The resulting cooking liquid is no longer needed.

3. Chop the chili peppers, garlic and ginger 3 sec/speed 8 . Before adding the oil, use the spatula to push the mixture from the edge back to the bottom of your mixing bowl.
Now steam the contents of the mixing bowl including the oil for 4 minutes/120°/speed 1 and cook it again after adding the meat for 8 minutes/120°/anti-clockwise/ speed 0.5.

5. Now add the dark beer, soy sauce, salt and brown sugar to the mixing bowl and cook everything for 18 minutes/98°/anti-clockwise/ speed 0.5.

6. Now serve the sauce with rice and garnish each plate with a few sprigs of coriander.
