Well, how are you feeling, are you already in the mood for spring? We're definitely ready. Ready for good weather, ready for sunshine. And of course: ready for Easter! And since there's no reason why cookies should only be eaten at Christmas, we've come up with a delicious little recipe for Easter bunny cookies.
We enjoyed the cookies plain, but if you like, you can of course also decorate them with a sugar glaze. Simply mix 125g sugar with 2 tbsp water until smooth and pour onto the cookies. You can also use lemon juice instead of water. Or you can use limoncello or egg liqueur if there are no children ;).
Ingredients:
- 125g soft butter
- 50g cane sugar
- 1 tsp vanilla paste
- a pinch of salt
- 1 egg, size M
- 175g spelt flour, type 630
- 50g ground hazelnuts
Preparation:
1. First put all the dough ingredients into the mixing bowl at once and mix for 15 seconds on speed 5. Remove the dough, wrap in cling film and chill for at least 2 hours.
2. Roll out the now firmer dough and cut out the cookies (we used our bunny shape for this). Now place the cookies in the oven preheated to 180°C top/bottom heat and bake for 10 minutes. If the cookies are still a little soft when they come out of the oven, that's fine. When they cool down, they will become harder again. :)
