Apple and lemon risotto

For me, risotto was the first dish in the Thermomix with this AHA effect. Sure, our Thermi makes a lot of work easier for us when baking, pureeing... But when it comes to risotto, that always strained my nerves. This constant stirring. That was the first time I sang praises to my Thermomix. Since then I have really enjoyed making risotto. And dare to come up with different, funny variations and creations. For summer: apple and lemon risotto.

TM5 - Ingredients for 4 servings

  • 250 g risotto rice
  • 70g Parmesan
  • 2 apples, tart
  • 5 spring onions
  • 850 g vegetable broth, hot
  • Juice of one lemon
  • 20 ml olive oil
  • Salt pepper

 

Mix It

  • Crush Parmesan → 10 seconds | Level 10
  • Quarter the apples, core them and place them in pieces in the mixing bowl
  • Wash the spring onions, put them in pieces in the mixing bowl and chop them → 3 sec. | Level 10
  • Add 10 g olive oil and sauté → 3 minutes | Level 1 | Varoma | Left rotation
  • Pour the apple and spring onion mixture into the pan
  • Add 10 g olive oil to the mixing bowl
  • Add risotto rice and sauté → 3 minutes | Gentle stirring level | 100 ° | Left rotation
  • Add hot vegetable broth and lemon juice → 22 min. | Gentle stirring level | 100 ° | Left rotation
  • Add the apple and spring onion mixture at the end of the cooking time.
  • Fold in with the help of the spatula and heat again → 2 min. | Gentle stirring level | Left rotation .
  • Fold in the Parmesan and serve immediately
