Where the sun meets the snow! Or how would you describe our peach and quark tower?

INGREDIENTS
- 300 g quark 20% fat
- 75 g crème fraiche
- 3 tbsp sugar
- Pck vanilla sugar or 2 tsp homemade
- 100 g whipped cream
- 1 tin of peaches
- tablespoon lemon juice
- Physalis Cape gooseberries
INSTRUCTIONS
Insert the mixer attachment. Pour the cold cream into the mixing bowl and beat on speed 3 until stiff. Decant and set aside. Put the quark, crème fraîche, sugar and vanilla sugar into the mixing bowl and mix for 10 seconds/speed setting 4. Then add the reserved cream and fold in for 10 seconds/speed setting 3. Stir in the rest with a spatula. Divide the quark cream into 4 glasses and chill. Rinse the mixing bowl. Drain the peaches, cut in half and place in the mixing bowl with the lemon juice and puree for 20 seconds/speed setting 10. Spread the peach purée over the quark cream and decorate with a physalis.
