I have some great bread for you today!
Delicious from the wooden baking frame. Right now it's grilling time and always delicious and fresh like from the wood-fired oven!

Potato bread with yogurt in a wooden baking frame

Ingredients:

  • 300 ml hot water
  • 200 g potatoes, raw, peeled
  • 150 g natural Greek yogurt
  • 1 bag of dry yeast
  • 1 tbsp honey or sugar
  • 400 g spelled flour type 812
  • 400 g spelled flour type 630
  • 1 tbsp salt
  • 1/2 tsp mustard flour
  • 40 g grape seed oil
  • Extra ingredients:
  • Grease the baking frame with clarified butter
  • 2 - 4 tbsp sesame seeds for sprinkling


Preparation:
Grease the wooden baking frame well, sprinkle with sesame seeds if necessary, then place it on an oven rack lined with permanent baking foil.
Amount of dough is approx. 1500 g, makes 4 bread blocks, each 375 g.
Put water and potato pieces in the mixing bowl, chop for 20 seconds/speed setting 8,
Then pour the remaining ingredients into the mixing bowl one after the other and knead for 3 minutes/grain setting.
Open the lid and let the oil spread around the edge and run in again
Mix 1 min/bread setting.
Pour the dough into an oiled bowl and let it rise in a warm place for 2 hours. After 1 hour, knead the dough with a dough scraper.
After rising, divide the dough into 4 pieces and shape them into 4 round balls on the work surface, place them in a box and press them evenly into the shape, moisten them with a little water and sprinkle with sesame seeds.
Let the dough rest for another 20 minutes, then bake at 185°C for about 90 minutes.
