American Pumpkin Cake

Who doesn't like pumpkin cake? Fluffy, colorful and pleasantly late summery. Today's #Thermomix® #recipe of the week is easy to prepare and the result is incredibly delicious! This and many other great recipes can be found in the Tanjine book.

INGREDIENTS:

Chevapchichi 

  • 200 g pumpkin flesh
  • 4 eggs
  • 200 ml oil
  • 300 g sugar
  • ½ teaspoon salt
  • 2 tsp cinnamon
  • 1 bag baking powder
  • 300 g flour type 405


Topping:

  • 100 g cream cheese
  • 60 g butter room temperature
  • 250 g powdered sugar
  • 1 sachet vanilla sugar
  • 2 tbsp cream
  • Fat for the tray

 

INSTRUCTIONS:

Sugar in Thermomix® into powdered sugar by pulverizing it for 1.5 minutes/speed setting 10. Then decant. Peel the pumpkin, cut into cubes and place in the Thermomix® briefly at speed 10. Put all the dough ingredients into the mixing bowl and knead for 3 minutes/speed setting for bread. Push the dough down with the spatula and mix again briefly on speed 3. Pour the dough into a pie dish or springform pan and bake in a preheated oven at 160° C for approx. 60-65 minutes. (In a bottomless baking ring, e.g. with Vemmina or Lumara, 45 - 50 minutes). Mix all the ingredients for the topping in the Thermomix® and mix for 20 seconds/speed setting 3. As soon as the cake comes out of the oven, spread the topping over the cake. Leave the cake to cool and then store in the fridge. You are welcome to decorate the cake with icing.
