What was the original shape of the tarte flambée?
The original rectangular tarte flambéealso known as Alsatian tarte flambée, comes from Alsace and the neighboring regions in southwest Germany.
It was originally used as a test for the correct temperature of the wood-fired oven: A then rectangular flat pastry made from flour, water and salt was rolled out thinly and topped with a layer of crème fraîche, onions and bacon. The tarte flambée was baked over a very high heat for just a few minutes until it had a crispy, lightly browned crust. Today, tarte flambée is a popular specialty and is available in many variations.
