The berry season can't be long enough for you? Then this basic recipe for the Thermomix is just the thing for you. Whether fresh strawberries, raspberries, blackberries, redcurrants or all of them together - we'll show you how to conjure up homemade fruit juice jelly from your harvest.
Ingredients for 8 glasses of 200 ml
- 2000 g water
- 1000 g berries
- 500 g gelling sugar 3:1
And this is how it works
Fill the mixing bowl with water and put the lid on without the blender jug. | |
Place the steam juicer attachment from MixFino onto the mixing bowl lid and insert the hose into a separate, heat-resistant container. | |
Place the berries in the Varoma, place on the steam juicer attachment and put on the Varoma lid. Start the food processor: 50 minutes/flavor/speed 1 |

Stop the cooking process as soon as no more juice comes out of the tube. Then clean the mixing bowl. | |
Pour the extracted juice and the preserving sugar into the mixing bowl. Fit the splash guard (e.g. WUUFO from Wundermix). |

Start the food processor: 13 minutes/100°C/speed setting 2 |

Carry out the gelling test. |

Immediately pour into 8 hot rinsed screw-top jars (approx. 200 ml), seal and leave to cool. |

Serve the jelly with fresh bread or rolls and store in a cool, dry place. |

Carry out the gelling test correctly
To check whether your jam or jelly has set, place a teaspoon of the hot fruit mixture on a cold plate and leave to cool for 1-2 minutes. Then drag your finger or a spoon over the mixture. If a skin forms and the mixture remains firm, gelling has been successful. If the mixture still flows, you need to continue cooking it.
