Risotto was the first dish for me in the Thermomix with this AHA effect. Of course, our Thermi makes baking, pureeing,... a lot of work. But when it came to risotto, it always got on my nerves. This constant stirring. That was the first time I wrote a hymn of praise for my Thermomix for the first time. Since then, I've really enjoyed making risotto. And I dare to try different, fun variations and creations. For summer: apple and lemon risotto.
TM5 - Ingredients for 4 portions
- 250 g risotto rice
- 70 g Parmesan cheese
- 2 apples, tart
- 5 spring onions
- 850 g vegetable stock, hot
- Juice of one lemon
- 20 ml olive oil
- salt, pepper

- Quarter and core the apples and add to the blender jug in chunks
- Wash the spring onions, add to the mixing bowl in pieces. mixing bowl and chop → 3 sec | speed 10

- Decant the apple and spring onion mixture
- Add 10 g olive oil to the mixing bowl add

Add the risotto rice and sauté → 3 min. Soft stirring stage | 100° | Counterclockwise rotation

Hot vegetable stock and lemon juicet add → 22 min. Soft stirring stage | 100° | Counterclockwise rotation
- Add the apple and spring onion mixture at the end of the cooking time.
- With the help of the spatula Fold in and reheat → 2 min. Gentle stirring stage | anticlockwise rotation .
- Fold in the parmesan and serve immediately
