Vegetable pie

INGREDIENTS
- 10 g fresh yeast
- 1/2 tsp sugar
- 1 tsp salt
- 75 ml water
- 2.5 tsp sesame oil
- 150 g canned bamboo shoots
- 10 g shiitake mushrooms
- 1.5 peppers
- 1/2 zucchini
- 75 g canned bean sprouts
- 50 g canned corn
- 2 eggs
- 1 tbsp soy sauce
- 1 tsp ground coriander
- Salt, pepper and Chinese seasoning
- 2 tsp sesame seeds
INSTRUCTIONS
Place all the ingredients for the dough in the blender jug, process for 3 minutes/bread setting, decant and leave to rise for 30 minutes. Roll out the dough into a suitable shape. Soak the shiitake mushrooms. Chop the peppers, zucchinis, mushrooms and bamboo shoots for 5 seconds/speed setting 5. Mix the vegetables with the bean sprouts and sweetcorn and spread over the pastry. Mix the eggs, soy sauce and coriander for 10 seconds/speed setting 4, spread over the vegetable cake and sprinkle with sesame seeds. Bake in the oven at 190°C for approx. 40 mins.
