Dessert experience thanks to tiramisu prepared with the Thermomix
According to the recipe, you need the following ingredients for 8 large portions of the Thermomix-tiramisu:
- 180 g sugar
- 150 g freshly brewed and hot espresso
- 1 pinch of salt
- 3 egg whites (medium size)
- 200 g cream
- 5 egg yolks (medium)
- 20 g fresh lemon juice
- pulp of a vanilla pod
- 200 g water for soaking
- 3 sheets of white gelatine
- 200 g mascarpone
- 30 g amaretto
- 2 tbsp cocoa powder
- about 24 pieces of ladyfingers

Mix the hot espresso with 80 g sugar and set aside.

Using a bowl on the mixing bowl, weigh out 50 g of sugar and also set aside.

Insert the mixer attachment, add the pinch of salt and the egg whites to the mixing bowl and beat the mixture for 3 minutes/speed setting 4 until stiff, adding the previously weighed sugar after about a minute. Then remove the mixer attachment, decant the egg whites and put them in the fridge.

Clean the mixer attachment and put it back into the mixing bowl, which has also been cleaned. Pour in the cream and whip on speed 3 until it has the desired consistency. Then chill the cream.

Pulverize 50 g of sugar for 15 seconds/speed setting 10 and push the powdered sugar down with the spatula.

With the mixer attachment in place, beat the egg yolks, vanilla seeds and lemon juice for 9 minutes/70 °C/speed setting 3 until frothy. Meanwhile, soften the gelatine in the cold water provided. Remove the mixer attachment.

Put the gelatine into the mixing bowl with the Amaretto and, without the measuring beaker in place, mix for 2 minutes/speed setting 3, adding the mascarpone by the spoonful through the opening in the lid. Pour the resulting cream into a bowl and carefully fold in the beaten egg whites and cream alternately.
- Dip half of the ladyfingers briefly in the espresso and line a square dish with them. Spread half of the cream on top and top with the remaining half of the dipped ladyfingers. Finish off the delicious tiramisu from the Thermomix with the remaining cream and then chill the dessert for at least 5 hours. Before serving, sprinkle the Thermomix-tiramisu with cocoa powder.
