How do I ferment natural yogurt in the Thermomix?

Classic natural yoghurt is clearly one of the most popular foods to be found in the fridge at home.And because fermenting yogurt yourself with the Thermomix is very easy and also saves money, we'll show you how to do it here:

To prepare this recipe, you will need the Simsafix - the practical multitool for the Thermomix TM6, TM6 and TM31.
The milk/yoghurt mixture must not be moved during fermentation so that the yoghurt can develop its creamy consistency.
 
Ingredients:
900g milk (min. 3.5% fat)
100g yoghurt (not heat-treated)
500g water
 
Note: The quantity can easily be halved as required.
 
Preparation in Thermomix:
1) Pour 500g of water into the mixing bowl and Simsafix insert.
2) Add milk and yogurt Simsafix and stir with a spoon until the yoghurt has completely dissolved.
3) Put the mixing bowl lid and measuring beaker on and keep warm for 10 hours / 40 degrees / setting 1 (ferment mode on TM6, alternatively set 6 x 99 minutes) so that the yoghurt cultures can multiply.
4) Enjoy the yoghurt or store in the fridge and consume within a week.
 
Tip: If you want your yogurt to keep for longer, heat the milk (without Simsafix) to 90° between steps 1 and 2, stirring occasionally, and only continue with step 2 once the temperature of the milk has dropped below 40° again.
