Formerly almost unknown - today, with the spread of so-called low-carb diets (dietwhich reduces the proportion of carbohydrates in the daily diet), these substitutes for our traditional wheat flour have become virtually indispensable.
The only drawback: due to the relatively high fat content, the calories that such a flour brings with it are not without.
My alternative? Guar gum! That sounds crazy. Have you ever heard of it?
Guar gum is the ground endosperm of the guar bean, an annual legume.
The main use of guar gum is as an emulsifier and thickener in various foods. It has a neutral smell and taste and is therefore ideal for use as a binding agent to thicken liquids. It can therefore be used for baking, jams and jellies, soups, salad dressings, sauces, syrups, juices or dairy products.
For me in particular: In smoothies! It improves the texture and is also gluten- and lactose-free. Oh yes: it's also excellent for the vegans among you!
Here is my favorite recipe for the perfect banana-guar gum smoothie:
- 150ml water
- 100 frozen banana pieces
- 3 g guar gum
- 30 g protein powder
