National holiday in the USA, national holiday in France. There's a lot to celebrate in July. So as a tribute to the USA, here are delicious pancakes, and as a pedant for France, equally tempting crépes. I started with the pancakes - in XXL format, of course, typically American.
TM5 - For 20 pancakes or 10 XXL pancakes
Ingredients for the batter
- 3 eggs
- 3 tbsp sugar
- 1 pinch of salt
- 200g yoghurt, 3.8% fat
- 100ml milk, 3.8% fat
- 150g flour
- 1 1/2 sachet baking powder
- some coconut oil for the pan
Ingredients for the topping
- Maple syrup, Nutella, whipped cream, fruit... whatever tastes good is allowed :-)
Mix It
- Whisk the eggs, sugar and salt in the mixing bowl with the butterfly attachment to a nice light foamy mixture → 5 min. | speed 5
- Remove the butterfly, add the remaining ingredients to the mixing bowl and whisk into a thick batter (preferably too firm rather than too runny) → 2 min. | speed 4
- Pour the coconut oil into the pan - pour the batter into the pan in batches
- Fry the approx. 8 cm pancakes for 2-3 min. per side until golden brown

Serve hot pancakes with toppings of your choice.
