Sole fillets in white wine sauce

INGREDIENTS:
- 4 sole fillets
- ¾ l water
- spring onions
- Semi-dry white wine
- Salt, pepper, lemon and herbs
For the sauce:
- Cooking stock, 1 MB cream
- 2 tbsp rice flour,
- salt, pepper
- lemon, herbs
INSTRUCTIONS:
Season the fillets, sprinkle with lemon and white wine, place in the Varoma® and top with finely chopped spring onions. Pour the remaining white wine (0.2 l per 4 people is more than enough) and water into the mixing bowl. Place the Varoma® on top, close the lid and steam for 10 min./Varoma®/speed setting 1. Set the Varoma® aside and now add the cream and rice flour and season with salt, pepper and lemon to taste. Cook for a further 2 minutes/90 °C/speed setting 2. To finish, add the herbs (parsley, chivesdill, etc.) to taste and stir briefly. Then arrange the sauce on the plate as a mirror and place the fish on top. Serve with potatoes or rice.
