INGREDIENTS
potato salad
- 2 kg jacket potatoes, peeled and cooked
- 2 vegetable onions
- 500 ml water
- 1 piece of Chinese garlic Solo called the solitary garlic
- 125 ml rapeseed oil
- 2 tablespoons mustard
- vinegar
- pepper
- 1 tbsp meat stock powder
- 1 tbsp vegetable stock powder
- 1 tbsp salt
- 1 tsp potato flour
- chives
dressing
- 500 ml quince jelly
- 500 ml pear juice
- 500 ml white balsamic vinegar
- 500 ml white wine vinegar
INSTRUCTIONS
Potato salad
Cut the potatoes into thin slices and place in a large bowl. Add mustard, pepper and vinegar as required. Cut the onions into quarters, place in the mixing bowl with the garlic and chop for approx. 10 seconds/speed setting 4, add the oil and steam for a further 3 mins./Varoma®/speed setting 1. Pour over the potatoes and stir gently. Pour the water into the mixing bowl, add the salt, vegetable stock powder, meat stock powder and potato flour and bring to the boil for 7 minutes/speed setting 1. Pour the stock over the potato slices and stir. Season the potato salad again if necessary and leave to infuse, it is delicious both warm and cold. Cover the warm potato salad with a cloth and leave to stand. Garnish with chives before serving.
Dressing
Put the quince jelly and pear juice into the blender jug and mix for 10 seconds/speed setting 3, then bring to the boil for approx. 4 mins./90°C/speed setting 2. Then add both types of vinegar, mix for 10 seconds/speed setting 3 and pour into bottles.
