Christmas cinnamon cookies

Once you've tried these cinnamon cookies, they'll probably go straight into your list of favorite Christmas cookie #recipes. You only need 5 ingredients and a #Thermomix®. Less than 30 minutes later, your kitchen will smell like delicious cookies!

INGREDIENTS

  • 400 g sugar
  • 500 g unpeeled almonds
  • 2-3 tsp cinnamon
  • 3 tsp honey
  • 3 egg whites

 

INSTRUCTIONS

Sugar in Thermomix® for 20 seconds/speed setting 10 to make powdered sugar and decant.

Put the almonds into the mixing bowl and grind for 15 seconds/speed setting 10. Add the cinnamon and 300 g powdered sugar and grind again for a few seconds/speed setting 10.

Add 2 egg whites and the honey and mix for 10 seconds/speed setting 5. Decant and then knead well with your hands. Leave the dough ball to rest for a while.

Rinse the mixing bowl. Place the remaining egg whites and the remaining powdered sugar in the well-dried mixing bowl and mix for approx. 2-3 mins. on speed 4 until white.

Preheat the oven! Place the dough in portions between a cut-open freezer bag and roll out. Now cut out round cookies using a shot glass or similar. Place them on the baking tray lined with baking paper.

Brush the cookies with the white mixture and bake at approx. 150°C top/bottom heat for approx. 12 minutes. Leave the cookies to cool.
