Baked vegetable casserole with the WunderSlicer®, vegan

Ingredients

2 large zucchinis
4-5 carrots
approx. 8 potatoes
1 red bell bell pepper 
1 orange bell pepper
1 yellow bell bell pepper
4 spring onions
Onions and garlic as desired
1.5 packs of vegan processed cheese
 
sauce
450 ml plant-based milk (soy, pea or similar) 
Spices to taste (salt, pepper, oregano, thyme, sweet paprika, garlic)
 

It's that simple

First wash all the vegetables thoroughly.
Now quarter the zucchinis lengthways, peel the carrots and quarter the peppers. 

WunderSlicer® on the Thermomix and start anticlockwise rotation at speed 2.5.

  • For the zucchinis, we use the coarser slices attachment (2.2 mm)
  • For the peppers, we use the coarser slices attachment (2.2 mm)
  • For the potatoes, we use the finer slices attachment (1.0 mm)
  • For the carrots, we use the coarser grating attachment (2.2 mm)

Grate all the vegetables and then finely chop the spring onions and garlic.

Place everything in a shallow baking dish. Preheat the oven to 200° fan.

Mix the plant milk with the spices and pour over the top.

Stir in half of the vegan processed cheese and place in the oven for approx. 45 minutes. Then sprinkle the remaining cheese over the casserole and return to the oven for a further 10-15 minutes.
