To prepare this recipe, you will need our WunderCap, as the knives of the Thermomix would otherwise cut into the bag. Alternatively, you can also use the "wave" knife cover, but you will have to reduce the number of steaks due to the lower capacity when cooking with the wave.
Ingredients:
- 1300g water
- 5 beef fillets, 3-4 cm thick, approx. 170-200g each
- 2 sprigs of fresh rosemary
- 100g butter
- salt
- pepper
Preparation:
1) Place WunderCap into your mixing bowl instead of the blade and pour in the water. It takes approx. 10 minutes for the water to reach the desired temperature of 60°.
2) In the meantime, prepare the steaks: Dab the steaks on all sides with kitchen paper, place each piece of meat individually in vacuum/freezer bags with a knob of butter and rosemary and seal the bags with a vacuum sealer or kitchen clips. The bags must be sealed tightly to prevent water from penetrating. There should also be as little air as possible in the bag.
3) Cook the sealed steaks for 65 minutes / 55° / level 0.5. Now open the bags and remove the steaks.
Fry them in a pan with butter on both sides until the desired browning is achieved.
We recommend roast potatoes, rosemary potatoes or tomato salad as a side dish.
Alternatively, the sliced steak can also be combined with a mixed salad and fruity dressing, making it a delicious starter for any barbecue evening.
