Ingredients for 4 portions:
- 500 grams of water
- 1 stalk of leek
- 250 gram carrots
- 20 grams sunflower oil
- 3-4 chili peppers / 1-2 teaspoons chili flakes, dried
- 10 grams fresh ginger, peeled
- 3 cloves of garlic
- 500 g beef fillet, finely sliced
- 50 grams soy sauce
- 300 grams dark beer (e.g. from König Ludwig)
- 2 teaspoons of salt
- 2 teaspoons brown sugar
- Optional: Fresh coriander
- 300 grams rice (cooked separately)
Preparation:
1. first add the water to the mixing bowl, place the Varoma on the mixing bowl and weigh in the carrots and leek in fine pieces.
The vegetables are now 22 min/ Varoma/ level 1 to cook. The best cooking results in the Varoma are always achieved when using a cooking chimney, which ensures even circulation.
2. now put the Varoma to one side and rinse the mixing bowl with cold water. The resulting cooking liquid is no longer needed.
3. chop the chili peppers, garlic and ginger 3 sec/speed setting 8. Before adding the oil, use the spatula to push the mixture from the edge back to the base of the mixing bowl.
Now steam the contents of the mixing bowl with the oil for 4 min/ 120°/ level 1 and cook again after adding the meat for 8 min/ 120°/ reverse/stage 0,5.
5. now add the dark beer, soy sauce, salt, brown sugar to the mixing bowl and cook everything for 18 min/ 98°/ reverse/ speed 0,5.
6. serve the sauce with the rice and garnish each plate with a few sprigs of coriander.
Have fun trying it out!
