Make your own red cabbage with the Thermomix

Rotkohl selber machen mit dem Thermomix

Red cabbage - or red cabbage as it is known in many places - is a classic festive side dish! With this simple recipe, your Thermomix with Varoma and our WunderSlicer V2 or WunderCentix Vegetable cutter you are sure to make the perfect red cabbage. Whether with roast meat, duck or vegetarian alternatives - simply unbelievably good in all variations! 

Ingredients for 4 portions 

  • 270 g apples (Boskop)
  • 150 g onions, halved
  • 500 g red cabbage
  • 250 g water
  • 40 g lard
  • 1 teaspoon vegetable stock
  • 40 g red wine vinegar
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp sugar
  • 15 g cornflour
  • 2 bay leaves
  • 5 cloves

WUNDERMIX ACCESSORIES USED 

And this is how it works 

Place a bowl on the mixing bowl lid and weigh in the apples, onions and red cabbage. Set the bowl down. 
    Use the WunderSlicer V2 with the thin cutting disk or the desired cutting disk from the WunderCentix vegetable cutterPlace the red cabbage, onions and apples in the opening one after the other and cut into thin slices. 
    Transfer the sliced mixture to the Varoma container. Pour the water into the mixing bowl, place the Varoma on top and close. Tip: With the  WunderSteam V2 steam chimney the cooking slots remain free! 

    Start the food processor: Cook for 15 min./flavor/speed setting 2. Set the Varoma down and collect the cooking liquid 
    Add the lard, vegetable and fruit mixture, 140 g cooking liquid, vegetable stock, vinegar, salt, pepper, sugar and spices to the mixing bowl. Mix everything well. 

    Start the food processor: 20 min./100°C/left-handed/stirring setting 
    Mix 45 g cooking liquid with cornflour, then add. Mix with a spatula.

    Start the food processor: 2 min./100°C/left-hand speed/speed setting 1
    Decant. Remove the bay leaves. Season the red cabbage to taste, serve and be amazed!
