Rustic white bread in a pot

Rustikales Weißbrot im Topf - Wundermix GmbH

Dough:

  • 100 g water
  • 100 g milk
  • 80 g white wine
  • 1/2 yeast cube
  • 1 tsp honey 
  • 500 g spelt flour 630
  • 2 tsp salt
  • 2 tsp baking malt
  • 30 g butter in small pieces

 

Put the water, milk, white wine, yeast cube and honey into the mixing bowl and heat for 2 minutes/37°C/speed setting 2.
Now add the rest of the ingredients to the mixing bowl and mix for 2 minutes/ knead setting.
Place the dough in a bowl, cover and leave to rise until double in size (approx. 30 mins.).
After rising, flour well on all sides and bake in a hot cast iron pan at 220°C O/U for 60 minutes (with lid).

 

The dough is wonderfully smooth and does NOT stick.
