Today's #recipe of the week is a moist #cake with raisins, almonds, currants & icing. Quick to bake, with a fine #cinnamon & #cardamom note - perfect with #coffee but also with #peppermint tea!

INGREDIENTS
Dough
- 250 g sugar
- 5 eggs
- 250 g flour
- 150 g raisins
- 150 g currants
- 150 g flaked almonds
- ½ piece of untreated lemon and its juice
- ½ teaspoon cinnamon
- 1 pinch of cardamom
Glaze
- 250 g powdered sugar
- 3 tbsp orange juice
- 1 tbsp rum
INSTRUCTIONS
Put the eggs and sugar into the mixing bowl and mix for 3 minutes/speed setting 5 until frothy. Add the remaining ingredients and mix again for 1 min/speed setting 3. Grease a baking tray well and spread the batter evenly on it. Bake the sheet cake in a preheated oven at 150°C - 175°C (gas mark 1 - 2) for approx. 45 mins. In the meantime, mix the sugar with the orange juice and rum. Remove the baked sheet cake from the oven and cut into small diamonds or strips while still hot. Brush with the icing and leave to cool.
