The sponge roll is the number one cake classic and is particularly popular during the berry season. INGREDIENTS
Dough
- 7 eggs
- 1 pinch of salt
- 100 g sugar
- 120 g flour
- 1 sachet baking powder
Filling:
- 2 cups of sweet cream
- 1 pack vanilla pudding without cooking
- 1 jar of sweet cherries
- Sugar to sprinkle on the cloth
INSTRUCTIONS
Insert the butterfly! Separate the eggs and beat the egg whites with a pinch of salt for 2 minutes/speed setting 3 ½.
Allow the sugar to trickle in through the opening and beat for a further 2½ minutes. Add the egg yolks through the opening in the lid.
Add the flour and baking powder and mix again for 1 min/speed setting 2-3.
Pour the batter onto a baking tray lined with baking paper and bake at 200°C top/bottom heat for approx. 10-15 mins.
Spread the sugar out on a tea towel and place the baked sponge cake on top. Now roll up carefully with the cloth without the filling so that it does not break.
For the filling, place the cream and custard in the blender jug. Insert the butterfly. First 20 seconds/speed setting 3, then briefly on speed 3.5.
Drain the cherries. Once the roll has cooled, carefully roll it out again and spread with the jam. Now spread the filling on top.
Now place the cherries on top of the filling and form a nice roll. Place the roll in the fridge.
The dough will be too dry in a fan oven, so please use top/bottom heat.
