Spelt bread with the Thermomix - which one goes with it?

The following recipe is suitable for a medium-sized loaf tin. Depending on the desired thickness, expect about 12 to 14 slices Thermomix-spelt bread.
- 30 fresh yeast
- 2 tsp sea salt
- 500 g spelt grains
- 30 g balsamic vinegar
- 450 g water
- 1 tsp brown sugar
- 1 teaspoon bread spice

The recipe for spelt bread from the Thermomix uses many of the reliable functions of your Thermomix:

First line the 26 cm loaf tin with baking paper.

Now add the Thermomix-spelt bread, put half the spelt grains into the blender jug and chop for 1 min/speed setting 10. Then decant and put the chopped spelt to one side.

Chop the second half of the spelt in the same way and then add the previously chopped grains, yeast, salt, balsamic vinegar, bread spice, sugar and water. Knead the slowly forming dough for the Thermomix-spelt bread for 3 minutes/dough mode.

Pour the kneaded dough into the loaf tin, cover with a clean tea towel and leave to rise in a warm place for an hour so that the yeast can do its work.

Shortly before the end of the rising time, preheat the oven to 220 °C top/bottom heat. Place the tin in the oven and spray some water from a spray bottle into the oven at the same time. This creates a nice crust. Leave the bread to bake for an hour.
