For the pinsa base dough:

  • 30 g olive oil
  • 220 g water
  • 20 g yeast
  • 400 g flour
  • 1 tsp salt

For the bruschetta topping:

  • 2 cloves of garlic
  • 1 onion, halved
  • leaves from 6 basil stalks plus a little more for garnish
  • 60 g olive oil
  • 20 g light balsamic vinegar
  • 0.5 tsp salt
  • 2 pinches of pepper
  • 750 g date tomatoes
  • rocket

 

Three simple steps to an Italian experience at home

  1. Add water, yeast, flour, olive oil and salt and knead dough for 2 minutes. Cover the mixing bowl and leave the dough to rise for an hour.
  2. Meanwhile, put the garlic, onion, basil, oil, vinegar and spices into the mixing bowl and chop for 4 seconds/speed setting 8. Add the tomatoes and peppers and mix together.
  3. Shape the dough into patties, top with the tomato mixture and bake for 13 minutes at 230 degrees top/bottom heat. Top with rocket and basil as desired.
