The nut corners according to the Thermomix-recipe consist of two parts: the shortcrust pastry and the nut mixture. If your oven is already preheated and the baking tray with baking paper is ready, you can start baking immediately. Thermomix-nut corners straight away. You will need these ingredients:
- 200 g walnut kernels
- 200 g almonds (peeled)
- 300 g flour
- 300 g sugar
- 1.5 tsp baking powder
- 2 eggs (L)
- 120 g apricot jam
- 370 g butter
- 2 sachets of real vanilla sugar
- 1 -2 tbsp almond liqueur
- 50 g water
- 1 packet of chocolate coating (whole milk or dark)
Nut corners from the Thermomix very quickly
- First put the almonds into the mixing bowl and chop them for a maximum of 5 seconds on speed 6. Repeat this step with the walnuts and mix the nuts together
- In the mixing bowl, mix the flour, 100 g sugar, 1 sachet of vanilla sugar, the baking powder, 160 g butter and the eggs for 30 seconds on speed 4.
- Now roll out the resulting dough on baking paper. Use the size of the baking tray as a guide.
- Now mix the almond liqueur and jam in the blender jug for 5 seconds on speed 3 and spread the mixture evenly and thinly over the dough.
- Preheat the oven to 180 °C (top and bottom heat).
- Now add the rest of the butter, sugar, vanilla sugar and water to the mixing bowl and heat the mixture for 5 minutes at 90 °C on speed 1.
- Add the chopped nuts during the last 20 seconds.
- Then spread the nut mixture over the dough and bake the nut corners from the Thermomix for about 30 minutes.
- Cut the nut corners into triangles while they are still warm and leave them to cool.
- Melt the couverture in a clean mixing bowl for 5 minutes at 60 °C on level 1. Then dip the ends of the cold nut wedges into it.
