INGREDIENTS
- 3 onions
- 200 g feta cheese
- 30 g yeast, fresh
- 1 teaspoon brown sugar
- 500 ml warm water
- 500 g wheat flour, type 550
- 500 g wheat flour, type 405
- 1 tsp salt
INSTRUCTIONS
Peel and quarter the onions and chop in the mixing bowl for 5 seconds/speed setting 6, pushing down with the spatula. Crumble the feta cheese and add to the mixture with 3 tablespoons of warm water, mix for 30 seconds/speed setting 3 until smooth, decant. Put the yeast, sugar and 100 ml water into the mixing bowl and heat for 2 minutes/37 °C/speed setting 2. Add the remaining ingredients and the feta cheese mixture, stir briefly with a spatula so that the water reaches the flour everywhere. Knead for 3 minutes/speed setting, decant the dough, cover and leave to rise for 60 minutes. Lightly flour the surface and cut into it with a knife. Bake in a preheated oven at 220 °C O/U for 60 minutes. Remove the bread from the tin and leave to cool on a cooling rack.
