Serves 1 person
INGREDIENTS
- 50 g dry pasta
- 200 g spinach leaves (frozen)
- 1 onion, halved
- 1 spring onion, chopped
- 1 garlic clove, peeled
- 1 tsp vegetable oil
- 1 pinch vegetable stock, instant
- 200 g water
- salt & pepper
- Grated nutmeg
- 1 tsp pesto, green
- 2 tbsp cream cheese, 5 % fat
- 100 g small tomatoes, quartered
INSTRUCTIONS
Chop the onion, garlic and spring onions for 3 seconds/speed setting 5 and cook with the oil for 2-3 mins./Varoma®/speed setting 1. Add the stock, water, spinach leaves and pasta and cook for 13 min./Varoma®/speed setting 1. Season to taste with salt, pepper, nutmeg and pesto. Stir in the cream cheese for 10 seconds/speed setting 3 and serve mixed with the tomatoes.
